Why this remake works

  • Lean turkey and beans raise protein without a sausage-heavy filling.
  • Greek yogurt in the salsa replaces sour cream.
  • Wholemeal tortillas add more fibre than standard white wraps.
  • Eggs are scrambled in a non-stick pan with minimal oil.

Method

  1. Mix the diced tomato with yogurt, lime juice, coriander, spring onion and a pinch of salt. Set aside.
  2. Heat olive oil in a non-stick skillet over medium heat. Cook turkey with cumin, smoked paprika, salt and pepper for 4–5 minutes until browned and cooked through. Stir in black beans for 1 minute to warm.
  3. Push the turkey mixture to one side. Crack in the eggs, scramble gently until just set, then fold everything together with the spinach until the leaves wilt.
  4. Warm the tortillas in a dry pan for 20–30 seconds per side until pliable.
  5. Divide the filling between the tortillas, spoon on yogurt salsa, fold in the sides and roll tightly into burritos.
  6. Return each burrito to the pan seam-side down for 30–60 seconds to seal, then serve.

Chef tips

  • Warm tortillas before rolling so they do not crack.
  • Keep eggs slightly soft — they continue cooking inside the wrap.

Substitutions

  • Turkey → Extra egg whites plus more beans for a meat-free version
  • Black beans → Pinto or kidney beans
