Why this remake works
- Oven roasting builds kebab flavour without a deep-fried coating.
- Greek yogurt works as both a marinade helper and a cool sauce instead of a heavy mayo dip.
- A large salad plate adds volume and crunch beside the flatbread.
Ingredients
Chicken thigh fillets, trimmed
300 gWholemeal flatbreads
2Cucumber
1/2Tomato
2Red onion
1/2Greek yogurt
120 gMethod
- Pat the chicken thigh fillets dry. Mix a little of the Greek yogurt with your kebab seasoning (or salt and pepper) and coat the chicken evenly. Rest 10–15 minutes while the oven heats.
- Heat the oven to 200°C. Spread the chicken on a tray in a single layer and roast for 20–25 minutes until cooked through and lightly browned at the edges.
- While the chicken cooks, chop the cucumber, tomatoes and red onion into bite-sized pieces for a crisp salad.
- Warm the wholemeal flatbreads in a dry pan or low oven until soft and pliable.
- Slice or pull the roasted chicken. Plate with the salad and flatbreads, then spoon over the remaining Greek yogurt as a cool sauce.
- Serve immediately so the flatbreads stay soft and the salad stays crunchy.
Chef tips
- Do not crowd the tray — space helps the chicken brown instead of steam.
- Rest the cooked chicken for a couple of minutes before slicing so juices settle.
