Why this remake works

  • Baked salmon brings protein and richness without frying.
  • Brown rice, edamame and cucumber build a balanced bowl with fibre and crunch.
  • A light soy finish seasons the bowl without a heavy creamy dressing.

Ingredients

Salmon fillet
140 g
Cooked brown rice
150 g
Edamame
80 g
Cucumber
80 g
Avocado
1/4
Soy sauce
1 tbsp

Method

  1. Heat the oven and bake the salmon fillet until it is just opaque and flakes easily — pull it as soon as it is done so it stays moist.
  2. Warm the cooked brown rice if it is cold. Prep the edamame, cucumber and avocado into bowl-ready pieces.
  3. Build the bowl: brown rice as the base, then edamame, cucumber and avocado around the sides.
  4. Flake or slice the baked salmon over the top. Finish with the soy sauce.
  5. Serve immediately. This is a poke-style bowl with baked salmon — not raw fish — so keep the salmon just cooked rather than dry.

Chef tips

  • Salmon continues to cook after it leaves the oven — stop when it just flakes.
  • Add avocado at the last minute so it stays bright.
